Grandma's Baking

It is 3 days after ANZAC Day, but I finally did manage to bake some ANZAC biscuits using my Grandma P's  recipe. Grandma P was a very jolly soul and loved baking - here is a picture of her (on the left) on my christening day....many years ago on what looks to be a hot and dry Townsville day.



And here is her recipe....

Anzac Biscuits

1 cup of plain flour
1 cup of coconut
1 cup of rolled oats
3/4 cup brown sugar
1/2 tsp bicarb soda
1 tab boiling water
125g butter
1 tab golden syrup

Mix the first 4 ingredients together in a bowl. Dissolve bicarb soda in hot water. Melt butter and mix in golden syrup. Add wet ingredients to dry and mix together. Roll teaspoon fulls of mixture into balls and place on greased tray. Flatten each biscuit with back of fork. Bake at 180 degrees until golden (12-15mins).
